How to Make Jollof Macaroni (Step-by-Step)

Let’s get cooking, buddy

Step 1: Parboil the Macaroni

This method depends on the cooking instruction in the pack. For the one I use, the cooking, the cooking instruction is 20 minute and I use 3 minutes to parboil and sieve. Add water in the pot and allow to boil. Drop a pint of oil into it and pour your macaroni. Sieve in 3 minutes.

Pro Tip: The macaroni will cook again in the sauce, so undercooking it now prevents mushiness later. As you sieve out the hot water, drizzle with cold water before allowing the water to drain. This will prevent further mushiness due to heat. Adding oil will prevent the macaroni from sticking to each other.
